So, I have news. Pretty big news, actually. This is on par with engagements, baby announcements, promotions, elections to the State Legislation, and getting a good parking spot at Belle Isle Wal-Mart.
I made these waffles.
I know. They look pretty fantastic, don’t they? Would you also be surprised to know that they are spiced apple butter waffles? Oh yeah. The day it dropped below 85 degrees in Oklahoma City I went there.
Also — I have big news on the OKC OVER EASY front. I’ve been doing the podcast out of my dining room for a year and some change — and now I’m moving on up to The Spy FM studios. Big deal, right?
I’ve had a great relationship with the awesome folks at The Spy while I did the radio show, The Dates of our Lives with my good friend Ryan Drake. DOOL ended, and we decided not to turn it into podcast form, even though The Spy’s digital network is increasing, due to their first Podcast addition, Localites. I missed coming to Ferris’s house every week to record, so I worked out a deal where OOE will be brought to you by The Spy FM and I won’t have to use my USB mics anymore. Also, hoping this works out for more free food for me.
What does this mean for OKC OVER EASY? Not a ton of changes. I’ll be releasing the show every Sunday, recording in a new spot, and bringing you all some ~fresh new content. (#breakfastbattles anyone?). The first episode will drop Halloween weekend.

Good. Now here are the waffles. They are the easiest waffle recipe that’s also the most impressive. Try using Mussleman’s Apple Butter, and use a heavy hand on the spices. Top with butter and pure maple syrup, and you’ll have a winner

- 1.5 cups belgium waffle mix
- 1 cup water or milk
- 1 tsp allspice
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 pinch salt
- 1/3 cup apple butter try musslemans!
Ingredients

- This is probably the easiest fall recipe that's the most impressive. Take your dry ingredients (mix, and spices) and whisk together. Pour in water and apple butter, mix well.
- Heat waffle iron to medium hot, and pour 3/4ths a cup into the center, and bake until crispy.
- Top with butter, syrup, and cinnamon sugar. (or just pick one!)
