Last year, I deemed 2017 the year of the omelette and athleisure. I was at the peak of my #fitnessjourney, and I had just moved into a corporate building where the cafe down below cooked amazing omelettes that I packed with spinach, roasted jalapenos, and cheddar cheese. I would have at least 3 a week. Safe to say, 2018 has brought some changes, and I’ve been really trying to focus on #fitnessjourney, my mental health, and not getting caught up in diet culture. And I think a new omelette recipe is just the way to do that.
